Sometimes you mess with recipes for fun. Sometimes you’re trying to win a contest! These were made for a school fundraiser that ended up showcasing a wonderful array of healthful pancake alternatives. I love these because they are light, buttery and easy to make. Throw some fresh or frozen berries on top, and maybe a little sunflower butter to make things interesting! Â Do you have a favorite healthy pancake recipe? 2 cups King Arthur Gluten Free Flour
1/3 cup almond meal
2 Tablespoons flax seeds
2 Tablespoons coconut sugar
1 1/2 teaspoon baking powder
3/4 teaspoon salt
3/4 teaspoon xantham gum
2 eggs (preferably from happy pasture hens)
4 Tablespoons butter or coconut oil, melted
2 cups almond milk
1 teaspoon vanilla
Coconut oil for skillet
1. CombineÂ dry ingredients together, and in a separateÂ bowl, whiskÂ the wet ingredients together.
2. Combine dry and wet together with a spatula.
3. Heat a skillet over medium, add a touch of coconut oil, thenÂ use a 1/4 cup measure to pour batter into pancakes. Flip when beginning to brown.
